I know you were all wondering and...

... well, I'm still alive. Although it was touch and go for a little while back there. Can you believe it has been 4 years since I've written on here?! Crazy.

I just re-read my last post (where I told everyone that we were going camping and canoeing and I would tell you all about it when we returned). So here it is... the rest of the story.

We had a wonderful time on that camping trip and made some really great memories. And I didn't die. As evidenced by this looooong overdue post.

Now, for the rest of those missing 4 years. During that time my dear husband, J, and I have--- been accepted and graduated from medical school (him), bought and sold our first home, went to Rhode Island for Navy Officer Training (him), worked for 4 years at a wonderful pediatric clinic (me), had and lost the most wonderful dog in the world, was diagnosed with Endometriosis and had surgery twice in 1 year (me), got pregnant and had a baby (that is now 10 months old!!!), and moved from Arkansas to Hampton Roads, Virginia.

We've been a bit busy.

Now, my days are spent at home with sweet baby S. Loving on him, laughing at how silly he is, trying not to cry when he bites my arms and pulls my hair, and attempting to keep some semblance of a home.

So. Here we are.

I've gone through many, many changes in the last 4 years and I think that I am going to resurect this blog in order to work through where I am right now.

I hope that there will be some fun moments that I can share with you and that I can also share my heart and what I am going through. Feel free to come along for the ride.

So, right now dear husband is working a shift in the ER until midnight and sweet baby S is asleep. Which means that I am going to make a bowl of cereal for dinner and watch Mockingjay (which I still haven't seen...welcome to Motherhood).

Ahoy there matey! It's the perfect day for a pirate cupcake tutorial...

So, today is my husband's birthday and in celebration I made him...

"Buried Treasure Chocolate-Covered Strawberry" Cupcakes

And they were delicious! Since they turned out so well I decided to share them with you dear sweet people who care so much about my wonderful husband and myself. So here we go!

"Buried Treasure Chocolate-Covered Strawberry Cupcakes"

1 box chocolate cake mix (prepared as instructed for 24-cupcakes)
2 cups diced strawberries
2 tablespoons white sugar (mix with the strawberries and let sit)
3 squares Chocolate Almond bark (melted in microwave)
Splash of cream or half & half (mix with the melted chocolate bark)
Vanilla-Buttercream frosting
Extra strawberries for decoration

1. Prepare cake mix as instructed for 24-cupcakes. Allow baked cupcakes to cool for 10 minutes in the pan and then put on a wire rack to cool completely. If they aren't totally cool the icing will melt off like on Cupcake Wars... and that team NEVER wins!


2. Once cupcakes are totally cool, cut a cone out of the top. Save this! Fill in the crater with the strawberries and a small amount of juice. This will make your cupcakes very moist.



3. Put a dollop of melted chocolate/cream mixture over the strawberries. Now, take the cone that you have saved and cut the point off so that you can smush it back on top of the strawberries. This is the buried treasure.
4. Top with Vanilla-Buttercream frosting and a fresh strawberry. If you are feeling really fancy, or you have melted chocolate left over, feel free to dip the strawberries or drizzle chocolate over the top!

5. Enjoy with someone that you love!!!

Vanilla-Buttercream frosting

2 sticks salted butter (room temperature)
1/2 package Vanilla instant pudding
1/4 cup heavy cream
1 cup powdered sugar

1. Cream the room temperature butter together until it is light and fluffy. Approximately 2 minutes.
2. Add 1/2 package of Vanilla instant pudding. If you accidentally add too much just add a splash more cream during the next step. Cream the pudding and butter together for 2 more minutes.
3. Add the heavy cream and mix for approximately 4 minutes. It should be pretty thick at this point.
4. Add the powdered sugar and mix for 4 minutes. This should absorb the moisture and make your frosting light and fluffy.
5. Put in a piping bag or Ziploc (my method since I don't have any piping bags... Christmas idea!!!). Cut a small slit and generously pipe the frosting on top of the cupcakes. Try and cover the edge where you cut the cone.

Where did the weekend go...

Well, it's Monday again. But this Monday is the first day of my last week working nights! Yippee! I'm so excited! I very much look forward to going to bed with my husband every night. It's amazing to me that some people take that for granted. It breaks my heart a little each time I would get into bed with a man who wallows everywhere and it was very apparent that he had forgotten how to share. Who can blame him when I'm gone for 3 nights at a time? Well, soon that will be over and I will be home EVERY night!

On another bright note, I had a wonderful weekend crafting. My husband took me to Hancock and Hobby Lobby on Saturday (cuz that's how wonderful of a husband he is. I didn't even ask! It was all his idea!) and I got super fun stuff to make something wonderful and unique for my sister who is getting married on June 4th! Her shower isn't till May so I can share it with y'all till then... dangit! But I'm very excited and proud of myself and I look forward to showing it off. I have a feeling that there will be many more crafts to come in the near future!

Well, that's all I have for today. It's time to wash some clothes before I have to start getting ready for work tonight. See you all again very soon!

Guess who's back, back again?

Well, it's not Justin... It's me! Seems I somehow deleted my old blog and all of the wonderful blogs that I so faithfully follow. I had my pity party, and then I decided that I would view this as a Spring cleaning of sorts. I'm about to start a new chapter in my life that I am so excited about and I hope that this brand new blog will be just the thing to inspire me to share with all of you lovelies.

Some new things happening in my husband and my life right now...
1. I am starting a new job on April 11 at a Pediatric Clinic. I will be the primary nurse for one of the wonderful docs there. It's a M-F 9-6 gig and I'm super-d-duper excited! No more nights for me!
2. Jim will be starting Medical School at University of Arkansas for Medical Science in August. We are looking forward to this with trust that the Lord will give him (US!) the strength to make it through the next 4 years!
3. We are looking to buy a house! Since we will both be working/schooling (is that a word?) in Little Rock, we are looking to make a BIG move in the next couple months. The sooner the better since Arkansas summers are brutal and it always seems that I am moving during them. I'm sick of it! We have been peruesing the internet for months and have recently gone and looked at a couple. Seems that there has been something major wrong with all of them. We are trusting that the Lord has the perfect new home just waiting for us.

Well, that is what's new with my little home right now. I promise to be a better steward of this blog and to keep you all updated!
